High-Protein-Cinnamon-Apple-Oatmeal Pancakes

Shaun T has really outdone himself with the Get Shredded 2 Food guide that comes in Asylum 2! Here’s a recipe that is definitely worth trying and using often!
1 Serving = 5 Pancakes

1 Scoop BeachBody Vanilla or Choc Protein Powder (I used vanilla)
1/2 Cu Old Fashioned Rolled Oats
1/2 tsp Baking Powder
1/2 tsp Cinnamon
Dash Sea Salt
4 Lg Egg Whites
1/2 Med Apple diced
2 tsp Unsweetened Almond Milk ( I just used regular 1% milk)
Butter for pan while cooking
2 Tsp 100% Maple Syrup
Sliced Apple for Garnish

Mix up all the dried ingredients, whip up the wet ingredients add them all together…it says to let them sit for 15mins but I couldn't wait that long...I was starving! Pour 1/4 cup per pancake and ta-dah! My new favorite breakfast!

Cranberry Cheesecake (Shakeology!!)



Cranberry Cheesecake Shakeology

1/2 cup cranberry juice (no sugar added)
1 Tsp fat free cream cheese
1 tsp sf/ff Jello pudding mix, cheesecake flavor
3 cubes of ice
1 scoop of Greenberry or Tropical Strawberry Shakeology
finish filling your blender cup with water(probably around 1/4 cup?)

Grilled French Toast (on Ezekiel bread)





This protein packed breakfast dish is perfect for summer while you're grills are out and waiting to be used! And don't worry, if you don't have a grill you can always use an indoor grill pan or even just cook it on your stove top! You can find original recipe here.

Fit Ingredients:

3 large egg whites

2 tbs coconut milk

1 tsp pure vanilla extract

2 tbs (15g) vanilla protein powder, optional

2 tsp stevia

1 tsp cinnamon (add more or less depending on your preference)

4 slices ezekiel bread (or bread of choice)

Non stick cooking spray

Grill or grill pan, optional but highly recommended

****************************************************************************

Directions:
In a bowl whisk together your egg whites, coconut milk and vanilla extract. Add in your protein powder, stevia and cinnamon. Mix well. Spray your grill pan with non stick spray (or warm up on your grill on low) and turn to medium heat. While the pan is warming, dip each of your slices of bread into the egg mixture. Coat one side then flip and coat the other. Allow excess egg to drip off and then place the bread on the pan/grill. Grill for 3-4 minutes or until desired darkness and then flip and cook an additional 2-3 minutes. Repeat until all bread slices have been cooked.

Serve hot. Top with fresh fruit, pure maple syrup, greek yogurt, nut butters, ricotta cheese, nuts/seeds or jam.

Pumpkin Snickerdoodles


Pumpkin Snickerdoodles (dairy, egg, gluten and sugar-free options)

Ingredients
Cookies:
1/2 cup coconut oil (or healthy fat alternative like butter)
3/4 cup granulated sweetener (the healthiest possible)
1 large egg or equivalent substitute
1/2 cup pumpkin puree
1/2 tsp pure vanilla
2 cups flour (whole grain preferred. I used a gluten free flour home-ground blend)
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
3/4 tsp baking soda
1/2 tsp salt (natural salt preferred)
Cinnamon Coating:
1/2 cup granulated sweetener (as healthy as possible)
1 tsp cinnamon
1/4 tsp nutmeg
Method
1. Preheat oven to 350 degrees.
2. Combine sweetener and spices for cinnamon coating and set aside.
3. Add flour, spices, baking soda, and salt to a medium bowl. Set aside.
3. Melt coconut oil in a pan over low heat (not necessary possibly in warmer months or if using another fat that is not so hard at room temperature). Place in a bowl.
3. Add sweetener and egg (or substitute) to the oil and beat well. Add pumpkin and vanilla and mix well again.
4. Add dries to wets and mix ’til combined. Do not over mix.
5. Make balls of dough (I use a small cookie scoop for this process), roll into balls, drop in cinnamon sugar topping, and roll to coat.
6. Place on cookie sheet / baking stone (I love my stones) about 2 inches apart. Flatten a bit with your hand.
7. Bake in preheated oven for about 10 minutes, or until slightly golden brown.
8. Allow to cool about 5 minutes before removing from tray and placing on a cooling rack.
9. Try not to eat them all :-) .

Notes and Tips:

1. If using gluten-free flour, you will want to make your cookies a bit smaller as gluten free baked goods tend to crumble easily.
2. For my gluten-free blend, I tend to use a majority of sweet brown rice. It has the sticky texture that you lost by taking out the gluten. I tend to bake all my gluten-free baked good with all whole grains. If you must, you can add some gluten free starch to help hold the cookies together, but if you make them small enough I don’t think it’s necessary.
3. You can use either a granulated or liquid sweetener in the cookie part. Read my tips onSubstituting Sweeteners for Cooking and Baking.
4. Instead of the spices, you could also substitute 2 tsp Pumpkin Pie Spice.

Flourless Zucchini Brownies


Flourless Zucchini Brownies

Have you heard of the Paleo Diet yet? I am all for it. Basically the Paelo way of eating mimicsdiets of our hunter-gatherer ancestors. You eat lean meats, seafood, vegetables, fruits and nuts. You cut out all the processed CRAP that is in so much of our food today, which is being linked to so many heath problems. The Paleo Diet encourages you to replace dairy and grain products with fresh fruits and vegetables. I have been researching a ton of recipes and recently came across this recipe for brownies. After reading all the outstanding reviews I knew I needed to make them for my family and try them out myself.

What you will need:
  • 1 cup of almond butter. You can make your own if you want to save a few bucks.
  • 1 1/2 cup of grated or chopped zucchini. I used a shredder and then chopped it up into really small pieces.
  • 1/3 cup of raw honey
  • 1 egg
  • 1 tsp of vanilla
  • 1 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1 cup of dark chocolate chips. I used gluten free chocolate chips.
Directions:
  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients into a large bowl and mix everything together.
  3. Pour into a greased 9x9 baking pan.
  4. Bake for 35-45 minutes, or until a toothpick comes out clean.
So how in the world do flourless zucchini brownies taste you may be wondering? They are theBEST brownies EVER--prepare yourself. My husband, who now thinks he is a food critic said, "The zucchini was subtle and not overpowering and they melt in your mouth." Haha I love it. He knows that I am going to put what he says into my blog (I have actually not posted recipes based on what he has said) so I think he tries to get all fancy with his critique. I will be making these again very soon.

Pancakes and Sundays go together like peas and carrots. At least that’s what I think Forrest Gump would say.

Ryan and I awoke in the mood for pancakes, but wanted pancakes with a little more staying power than basic ‘cakes. Since we were out of oatmeal, most of my favorite protein pancake recipes were out, so I grabbed the almond butter we had on hand, figuring I could incorporate it into pancakes in some way to add protein and healthy fat to our breakfast.

I kept things very simple with the pancakes and use minimal ingredients. I was pretty shocked when they ended up being a huge hit in our house.



An added and unexpected bonus?

They’re both gluten-free and Paleo friendly for those of you out there who might have some dietary restrictions.


Almond Butter Pancakes

Makes six medium-size pancakes

Ingredients:
1 cup almond flour
1/4 cup almond butter
3 eggs
1 tablespoon honey
1 teaspoon cinnamon

Directions:
Heat griddle or pan to medium heat, spray with cooking spray or add a bit of butter so pancake batter does not stick
Add all ingredients into a bowl and stir until everything is completely mixed together
Pour batter onto griddle and allow to cook until bottoms start to slightly brown, about three minutes
Flip and continue to cook until other side slightly browns, about two to three minutes
Top with desired toppings and enjoy





These pancakes are dense and incredibly filling. I topped mine with syrup and crushed almonds and loved them!

Pumped Up Protein Pumpkin Cookie Dough


Pumped Up Protein Pumpkin Cookie Dough

serves 1

1/2 cup pumpkin
1/2 serving of protein powder (10-12 grams)
2 tablespoons PB2 (12 grams)
sweetener if needed (see notes below)
1/4 cup oats (20 grams)
cinnamon, pumpkin pie spice, splash of vanilla (optional)
1/2 cup brown rice cereal
Combine all ingredients except for brown rice cereal. Carefully stir in rice cereal. Cover and refrigerate (if you can wait for it to chill).

Top with nut butter, chocolate chips, etc.

Notes-
You can use a whole serving of protein powder (20-25 grams) and omit the PB2.
I usually use 6 drops vanilla liquid stevia and 1 packet of Splenda if using unsweetened protein powder.

Reset Day 14


yep you're reading it right, the pic is from Day 12 & I'm on Day 14....but I had an exact repeat except I added peaches to my fruit plate!  I had to use up my leftovers before tomorrow b/c I hit a new Phase with new foods tomorrow!!!  I had my very last Detox before supper tonight!!  YIPPPEEE!!  Now I will be happy to be done with Alkalinize at the end of Day 21! :)  ONE MORE WEEK, I got this....right?  Ugh today was hard...very hard to drive by the snow cone stand while I was drenched in sweat from cleaning my car inside & out! (If you know me you know this was quite a chore, lol!)

So I'm off to bed with my family, after an awesome Lord's Day!  Hope you had a great one yourself!!!

Reset Day 13


I HAVE ONE WEEK LEFT!!!  Ok so I am a little more than excited that tomorrow is my last day of Phase 2!  SOOO that means 2 weeks down and 1 to go!  I am fixing to enter RESTORE Phase!  AHhhhhh!  I already feel great, so I know this is going to be awesome!!!  LOOK at all the food I ate today, and it was all yummy!  I couldn't quite get all the kale down but I fixed a lot!!  My breakfast was a little skimpy this morning b/c I was running low on fruit but I ran to the store tonight for milk for the kiddos & fixed that problem!  I am now restocked on strawberries, kiwis, blueberries & peaches!  MMM!

Well, I have to get to bed so I can get up for church in the morning...so sorry for the speedy update.
